have no time: rub in and start
to cook immediately. If you are
not in a hurry and you have
some time, allow meat to
marinade using the following
guide.
Small foods: 10-20 minutes.
Thin cuts of single serving
portions: 30-90 minutes.
Thicker cuts of single serving
portions: 1-3 hours.
Large or tough cuts such as
rack of ribs or a whole
chicken: 4 hours to overnight.
Very large cuts such as
roasts or whole turkeys:
overnight to 24 hours. Shake
1 Tbsp. seasoning per pound
meat before grilling or broiling.
Dry Rub: Massage 1
Tablespoon seasoning into a
pound of meat. Let sit,
wrapped in plastic in the
refrigerator using the basic
guidelines for timing.
Marinade: Mix 1/4 cup olive
oil, 2 Tablespoons soy sauce,
vinegar, wine or citrus juice
and 2 teaspoons seasoning.
Add 1 lb. meat, marinade 30
minutes, covered in the
refrigerator.
Crusted Chicken: Rub 1
Tablespoon seasoning into 1
lb. chicken with skins
removed. Place meat in a hot
skillet with a little olive oil.
Cover; cook until done;
remove from pan. Add 1/4 cup
water to pan; de-glaze by
loosening drippings with a
whisk. Pour over meat when
served.

Barbecue Spice Rub
A great base for the best ribs, sliced meats and barbecued chicken. A little
sweet with a hint of Red Alder smoky flavor. Add 1 Tablespoon seasoning to
1 lb. meat in a zip-lock baggie. Add 1 tsp. honey, 2 Tbsp. ketchup, 1 tsp. rice
vinegar, 1 tsp. Worstershire, and 1/4 cup orange juice; marinade overnight.
Fry meat quickly in 1 tsp. oil or barbecue meat and brush remaining liquid
onto meat during barbecuing.
